How to Make Awesome And Healthy Meatloaf

  1. Preheat oven to 350°F (175°C).
  2. Spray a large skillet with cooking spray. Add 1 medium onion (chopped), 1 green bell pepper (chopped), 2 carrots (chopped), 1 cup chopped mushrooms, 2 cloves garlic (minced), 1 tbsp olive oil, 1 tsp dried oregano, 1/2 tsp dried basil, and 1/4 tsp black pepper. Sauté for 10 minutes over medium heat, stirring occasionally.
  3. Allow the vegetable mixture to cool completely to room temperature.
  4. In a large bowl, combine 1.5 lbs ground beef, 1 large egg, 1 tsp salt, 1/2 tsp black pepper, 1 cup tomato sauce, and the cooled vegetable mixture. Mix gently until just combined.
  5. Line a baking sheet with foil and spray with cooking spray.
  6. Divide the meatloaf mixture into 7 equal portions. Shape each portion into a small loaf and place them on the prepared baking sheet.
  7. Top each meatloaf with approximately 1/7 of the remaining 1 cup tomato sauce.
  8. Bake for 30-35 minutes, or until the internal temperature reaches 160°F (71°C).
