How to Make Awesome And Healthy Meatloaf
- Preheat oven to 350°F (175°C).
- Spray a large skillet with cooking spray. Add 1 medium onion (chopped), 1 green bell pepper (chopped), 2 carrots (chopped), 1 cup chopped mushrooms, 2 cloves garlic (minced), 1 tbsp olive oil, 1 tsp dried oregano, 1/2 tsp dried basil, and 1/4 tsp black pepper. Sauté for 10 minutes over medium heat, stirring occasionally.
- Allow the vegetable mixture to cool completely to room temperature.
- In a large bowl, combine 1.5 lbs ground beef, 1 large egg, 1 tsp salt, 1/2 tsp black pepper, 1 cup tomato sauce, and the cooled vegetable mixture. Mix gently until just combined.
