How to Make Awesome Pinto Beans
- Fill a 12-quart kettle halfway with hot water (approximately 6 quarts).
- Add 1 tablespoon kosher salt and 2 pounds of pinto beans.
- Soak for 1-2 hours.
- Do not drain the soaking water.
- Bring beans to a boil over high heat. Reduce heat to low, and add 4 cups chicken stock, 4 ounces salt pork (diced), and 4 ounces bacon (diced).
- Add more water if necessary to keep beans submerged.
- Cover and simmer for 1.5 hours.
- Add 1 medium onion (diced), 2 cloves garlic (minced), 1 teaspoon cumin, 1/2 teaspoon chili powder, 1/4 teaspoon cayenne pepper (or more, to taste), and 1/2 cup chopped cilantro. Cover and cook until beans are tender.
- Continue to cook for approximately 2-3 hours, or until beans reach desired tenderness, stirring occasionally to prevent sticking.
- If you prefer spicier beans, add more red pepper flakes and/or a serrano pepper (finely minced).
