- Add 2 lbs potatoes, peeled and cubed, 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can kidney beans, rinsed and drained, 1 (15 ounce) can black beans, rinsed and drained, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon cayenne pepper (optional), and 1 cup beef broth.
- Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until potatoes are tender.
- Season with salt and pepper to taste. Garnish with fresh cilantro or sour cream before serving (optional).
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
