How to Make Amazing Vegetable Quiche

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine oats and oat bran.
  3. Cut in chilled butter and applesauce using a pastry blender or two knives until the mixture resembles coarse crumbs.
  4. Gradually add ice water, stirring until just moist.
  5. Form the dough into a ball, wrap in plastic wrap, and chill for at least 30 minutes.
  6. On a lightly floured surface, roll out the dough into a 10-inch circle.
  7. Transfer the dough to a 9-inch pie plate coated with cooking spray.
  8. Trim and crimp the edges.
  9. Prick the bottom of the crust with a fork.
  10. Bake for 7 minutes at 375°F (190°C).
  11. Reduce oven temperature to 325°F (160°C).
  12. Meanwhile, in a large skillet, sauté eggplant, tomatoes, and garlic until softened.
  13. Add zucchini, squash, spinach, mushrooms, onion, basil, oregano, salt, pepper, and Worcestershire sauce.
  14. Cook until most of the liquid has evaporated. Stir frequently to prevent burning.
  15. In a bowl, whisk together eggs and half of the Parmesan cheese.
  16. Stir in the vegetable mixture.
  17. Pour the vegetable mixture into the pre-baked pie crust.
  18. Sprinkle the remaining Parmesan cheese and mozzarella evenly over the top.
  19. Bake for 45-50 minutes, or until the quiche is set and golden brown.
  20. Let cool slightly before slicing and serving. Enjoy hot or cold!
