How to Make Apple Barbecued Ribs

  1. Remove the membrane from the back of each rack of ribs. (Tip: Use a butter knife to loosen one edge, then peel it off.)
  2. Cut the ribs into individual serving-size portions.
  3. Place ribs in a large Dutch oven.
  4. Add enough water to completely cover the ribs.
  5. Bring to a boil over high heat.
  6. Reduce heat to low, cover, and simmer for 30 minutes.
  7. Remove ribs from the Dutch oven and drain. Set aside.
  8. In a medium saucepan, sauté 1 medium onion (chopped) and 4 cloves garlic (minced) in 2 tablespoons olive oil until softened (about 5 minutes).
  9. Stir in 1 cup apple cider vinegar, 1 cup apple juice, ¾ cup brown sugar, ½ cup ketchup, ¼ cup Worcestershire sauce, 2 tablespoons Dijon mustard, 1 tablespoon smoked paprika, 1 teaspoon ground cinnamon, ½ teaspoon ground cloves, ½ teaspoon salt, and ¼ teaspoon black pepper.
  10. Bring the sauce to a boil over medium heat.
  11. Reduce heat to low, and simmer uncovered for 15 minutes, stirring occasionally.
  12. Remove the sauce from heat and set aside.
  13. Preheat grill to low heat (approximately 250°F).
  14. Grill the ribs for 40 minutes, turning frequently, until slightly tender.
  15. Baste ribs generously with the apple barbecue sauce.
  16. Continue grilling for another 20 minutes, basting frequently, until the ribs are fall-off-the-bone tender and the sauce is caramelized.
  17. Serve immediately with extra sauce for dipping.
