How to Make Barbecued Beans With Ground Beef
- Preheat oven to 350°F (175°C). Grease a 4-quart casserole dish.
- Cook 1/2 pound of bacon until crisp. Remove, cool slightly, and crumble. (Can be done a day in advance)
- In the same skillet, brown 1 pound of ground beef with 1/2 medium onion (chopped), 2 cloves garlic (minced), and 1-2 jalapeños (seeded and minced, optional).
- Cook over medium-high heat until the meat is no longer pink. Drain excess fat.
- Return the meat to the skillet. Stir in 2 tablespoons chili powder, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, and 1/4 teaspoon cayenne pepper (optional).
- Cook until the meat is well browned.
- Add 1 (15-ounce) can of butter beans (or 2 (15-ounce) cans of kidney beans), 1 cup of ketchup, 1/2 cup of brown sugar, 1/4 cup of apple cider vinegar, 2 tablespoons of Worcestershire sauce, and 1 teaspoon of Dijon mustard.
- Stir in the crumbled bacon.
- Bring to a simmer, stirring constantly.
- Season generously with salt and pepper to taste.
- Transfer the mixture to the prepared baking dish.
- Bake uncovered for 1-1.5 hours, or until thickened, stirring occasionally.
- Serve over cooked rice, if desired.
