How to Make Holiday Fruitcake

  1. Combine the dried fruits and nuts in a large bowl. Pour bourbon or brandy over the fruit and nut mixture. Cover and let stand for 2-3 hours.
  2. Preheat oven to 275°F (135°C).
  3. In a separate large mixing bowl, cream together the butter and sugars until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a medium bowl, whisk together the flour, baking soda, baking powder, and spices.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Drain the fruit and nut mixture, reserving the bourbon/brandy for later use.
  8. Gently fold the drained fruit and nut mixture into the batter.
  9. Grease a 12-cup fluted pan or two 6-cup fluted pans thoroughly. Pour the batter into the prepared pan(s) and press firmly into the corners.
  10. Bake in the preheated oven for 3-3 1/2 hours, or until a wooden skewer inserted into the center comes out clean.
  11. Let the fruitcake cool in the pan for 20 minutes before inverting it onto a wire rack to cool completely.
  12. Once completely cool, wrap the fruitcake tightly in plastic wrap and store in a cool, dark place.
  13. Starting the week after baking, brush the fruitcake with the reserved bourbon or brandy once a week until Christmas for an extra boozy kick!
